Many countries offer wonderful and savory “national dishes”, but beautiful España offers a feast, which ranks extremely high on the list of international favorites. Spain’s delectable national dish is Paella, pronounced Pah-e-ya. What’s Paella you ask? Paella is actually the name of a cast iron cooking pan in which, Paella is made. The origin of this succulent dish dates back to the days of the crusaders, when it was prepared without finesse. Since that tine, the preparation of Paella became the challenge of many agourmets. Each trying to playfully harmonize all the intriguing ingredients to create a culinary nirvana. Because all the zealous work our predecessors did Paella evolved into what the is today one of the world’s most sought after delicacies.

Your host Rudy Lopez, has spared no expense to bring you this exotic meal. From the freshest crab, mussels, lobster, and all the other zesty ingredients including imported Saffron from Spain ($100 per ounce). Our meticulous preparation of the recipe, which dates back to the days before Spaniards came to Mexico, always delights the palettes on culinary connoisseurs.

The real great story behind the story is how obtaining the secret recipe almost cost the life of your host. Rudy trekked days through the Boa Constrictor infested dense jungles of the Yucatan Peninsula to reach the mythical goal, Teotihuanaco. Only there could he locate Juan Bautista de Leon, at 103 years old the only living ancestor to Ponce the keeper of the prized recipe. Rudy was able to convince Juan to give him the recipe by agreeing to continue the spirited tradition of Paella. Without reservations Rudy agreed, gave his gratitude to the old man and began his long dangerous journey home.

In order to prepare Paella as it was meant to be served, along with our other “Special Engagement” menu items, it requires a two-day notice for parties of five people or more.
